Abstract
Introduction: The Health and Hope Clinic is a nonprofit, faith-based organization that provides free healthcare services to uninsured and low-income individuals in Pensacola. Many of the patients served by the clinic face significant barriers to maintaining a healthy lifestyle. Including education about food in the treatment plan can reduce illnesses and the burdens associated with chronic care.Aims: The purpose of this project was to educate patients on how to understand food labels and lab values associated with nutrients. After this educational activity the participants should be able to: (1) Discuss how to choose nutritional foods through food label literacy; (2) Explain how nutritional factors of food impact the disease process; and (3) Recognize foods that will improve health outcomes of patients living with chronic illnesses in relation to lab values. Methods: The group created the following deliverables: (1) Visually appealing presentation; and (2) Handout about food labels. Canva and Google Slides were utilized to create the deliverables. Health literacy was considered with deliverable information clear to read and understand. Results: The group piloted the handout with 12 patients at the clinic. During the pilot, (12/12) participants verbally expressed the handout, increased their knowledge and served as a helpful resource. Conclusion: One common issue observed among patients is a lack of understanding of food labels, which can lead to poor dietary choices and negative health outcomes such as obesity, hypertension, and diabetes. This proactive educational approach supports the clinic’s mission of holistic care and community empowerment.
