Vietnamese cuisine is known for fresh ingredients, balanced flavors, and deep cultural meaning. But in many U.S. regions, particularly the Southeast, we see a shift away from traditional preparation due to market demands. Our research applies the Theory of Planned Behavior, combined with insights from behavioral economics, to better understand this phenomenon.
