Impact of a Prenursing Nutrition Course on Healthy Eating Factors and Diet

Abstract

This quantitative study examined the impact of an online nutrition course on prelicensure Bachelor of Science in Nursing students’ healthy eating beliefs, reasons, and dietary intake at a southeastern U.S. university. Guided by the conceptual model map of factors influencing health and nutrition behavior (Schlüter et al., 2020), the study also explored the interrelationships between nutrition knowledge and skills, healthy eating motives, beliefs, reasons, and dietary intake. The study used a preexperimental design with data collected through pre- and post-course questionnaires and coursework assessments. Data analysis included descriptive statistics, t tests, and path analysis. Although participants attained nutrition knowledge at 91.8%, their nutrition literacy was only 70.8%. Additionally, nutrition knowledge and literacy had no significant effect on the measures of healthy eating reasons and dietary intake. The course did not significantly change the measures of healthy eating beliefs and reasons, except for a small change in perceived behavioral control (p = .026, d = 0.30). Dietary intake, measured by the Healthy Eating Index (HEI-2015) and caloric adequacy percentage, showed no significant change after the course. Although a positive healthy-eater identity predicted healthy eating reasons and HEI scores, some motivations and intentions to eat healthy resulted in restrictive dietary practices. The findings suggested that nutrition education alone is insufficient to change dietary practices. Future research should explore integrative curricula that enhance nursing students' nutrition literacy and healthy-eater identity by fostering practical skills and strategies to support nutrition self-care and address factors influencing their dietary behavior.
