Abstract
Introduction: Health & Hope Clinic (HHC) provides free, accessible healthcare services to uninsured and medically underserved residents in Escambia County, Florida. The issue was food insecurity and limited education about healthy foods. Food insecurity often coincides with a diet of highly-processed foods which are directly correlated with an increased incidence of chronic disease. Aims: The purpose of this project was to provide evidence-based education about healthy eating habits to improve chronic disease maintenance for patients at the HHC. The aim was to collect non-perishable foods that follow the Dietary Guidelines for Americans, 2025–2030 and provide nutrition education on July 15, 2026. Methods: The target population was people who did not qualify or were on the waiting list for the HHC Food as Medicine program. The group developed two deliverables: (1) Flyer for a healthy food drive; and (2) Infographic with the key findings from the Dietary Guidelines for Americans, 2025–2030. The group identified multiple community sites to place collection boxes. Results: Donations included: 477 canned goods; 112 assorted dried goods; 17 healthy oils; and 7 bags of sweet potatoes. Education was provided to 38 patients on the new healthy eating guidelines. The patients also “shopped” for well balanced meals. The leftover foods were assembled into emergency food bags. Staff and patient feedback was positive. Conclusion: People experiencing food insecurity are disproportionately affected by chronic disease due to their socioeconomic status. This project provided evidence-based health education and distributed healthy foods directly to patients affected by food insecurity.
